Bell Sugar

Bell Sugar is primarily used in desert dishes or as a sweetener in hot beverages. The glittering orange crystal powder is a great festive garnish. Bell sugar is far more expensive than regular white sugar because the creation of it is easy but pretty labor intensive, and it requires a lot of beans to create a small amount of sugar.   Bell sugar is made by steaming Bella Beans in large steel drums. The beans secrete a syrup which is boiled until it thickens. After it has been left to cool, the substance is crushed into smaller crystals. Usually the sugar is stored and shipped in small wooden barrels with a bell symbol painted on it. In households the sugar is often kept in ornate ceramic or glass jars.
