Bittersugar Beet

A bittersugar beet is a plant with a root that contains both a high concentration of sucrose as well as a substance that is similar to licorice but even more bitter. These types of beet grow in colder and temparate climates, but are not often cultivated on a large scale.   The beet has a large, dark gray fleshy taproot with a flat crown. The plant consists of the root and a stem with dark red leaves that are also edible and often used in soups and stews. The sugar is formed by photosynthesis in the leaves and is then stored in the root. The sugar harvested from these beets can be used in the production of certain candies including magical candies such as Bittercandy Taffy. However, it is primarily used in the production of medicines and potions. If the bittersugar is disttiled thoroughly, only a small drop is strong enough to mask other unpleasant flavors, which prevents damaging the purity of the potion or medicine.
